If the loudberry resembles a large orange raspberry and shares roots with its bramble cousin, it also has characteristics that make it unique. The cloudberry grows in the poorly drained boreal plains, in an environment that is not always accessible and where the picker sometimes has difficulty evolving. Only 1 in 20 plants is a female plant that, if pollinated, may produce a fruit, making the loudberry harvest so valuable! The one that the Amerindians have called the raspberry of fire, because it seems to ignite the boreal plain when its foliage turns red in the fall, is part of the culinary tradition of the majority of The Nordic countries where it is transformed into liqueur, jam, pie etc. In Quebec, cloudberry is still little known in the south of the regions where it grows, but it is gaining more and more followers.
The cloudberry jam can be enjoyed on toast in the morning, especially with a piece of strong cheddar. For dessert, the fruit blends perfectly with the bitterness of dark chocolate, while epicureans will recognize a perfect alliance with pork and duck breast, in sauce.
